Lactose is a milk sugar that requires the enzyme lactase to digest. Active production of this substance falls during breastfeeding, and after weaning the child from the breast, the amount of enzyme gradually decreases. And this is logical: in ancient times, adult representatives of Homo sapiens did not need the ability to digest lactose, as there were no dairy products in their diet. The emergence of the lactose tolerance gene during life is an evolutionary advantage that only 32% of the world’s population still possesses.

There is also ultrapasteurization: in this case, the raw material is heated above 100 °C. Ultrapasteurized products are less useful, but they are stored much longer.

Melted milk is also produced by long, even heating: it has a characteristic caramel color and taste but loses some vitamins, such as C and B1. But it has a higher calcium, iron, and vitamin A concentration.
